To create an iTunes backup without using Time Machine in Mac OS X, open iTunes. Go to iTunes > Library > Export Library. You can put this on a CD. This really isn't necessary as long as your songs are bought from the iTunes store or your computer is backed up with Time Machine. I hope this helps!
